Ingredients

Directions

Make the filling

  1. Heat 1 tablespoon of oil in a skillet, add onion, stir-fry over moderate heat for 2 minutes.

  2. Add beef, salt, and pepper, stir-fry for 5 minutes.

  3. Add egg and parsley, fry for 1 minute more, then cool well.

Roll the bourek

  1. Take 1 phyllo sheet, spread flat with the short end nearest you. Place 2 heaping tablespoons of the beef mixture 2 inches from the short edge. Fold both long sides toward the middle, beginning with the short end, roll the phyllo to shape a packet 4 inches long and 1½ inches wide.

  2. Repeat with the remaining phyllo sheets and stuffing. Set aside.

Brown and serve

  1. Put the remaining oil in a skillet over moderate/low heat, add the rolls, and brown both sides for about 3 minutes. Drain the rolls on paper towels for a minute.

  2. Serve warm with a squeeze of lemon juice.

What each ingredient does

Ground beef
Forms the savoury filling that gives each roll its main body.
Phyllo sheets
Thin layers that crisp and brown in the hot oil to form the outer shell.
Egg
Binds the cooked beef and onion mixture so it holds together inside the roll.
Onion
Softens and sweetens as it stir-fries, adding flavour to the filling.
Vegetable oil
Conducts heat and helps the phyllo turn golden and crisp when browned.

The step that matters

Cool the filling well before rolling. Warm filling softens the delicate phyllo and can make it tear or turn soggy, and the egg can cook unevenly. Cooling it fully keeps the packets sealed and crisp when fried.

Swap the onion

How well each one fits the dish's main ingredients (egg, parsley, beef, lemon, pepper):
