What each ingredient does

Long-grain rice
Forms the bulk of the dish; toasting it briefly in fat before adding stock helps the grains stay separate.
Chicken pieces
Provide the main protein; gentle poaching keeps the meat tender and yields a flavourful stock.
Fresh red chillies
Provide heat and fresh pungency to the chilli sauce.
Lime
Adds acidity that brightens the sauce and balances the richness of the rice.
Ginger
Adds aromatic pungency when fried in oil and again in the chilli sauce.

The step that matters

Cook the chicken in water. Overcooking makes chicken proteins tighten and dry out, leaving the meat tough. Stopping at the right point keeps it moist and tender, and keeps the stock clear and well flavoured.

Swap the garlic

How well each one fits the dish's main ingredients (rice, chicken, ginger, clove, cinnamon, sauce, lime):

  1. Cardamomfits better
  2. Turmericfits better
  3. Cuminfits better
  4. Garlicthe original

Fit is the average pairing score against rice, chicken, ginger, clove, cinnamon, sauce, lime. Candidates are from the same food group and used in at least 100 recipes.
