What each ingredient does

Eggs
Bind the squash mixture and set into a firm, sliceable custard when baked.
Butternut squash
Provides the bulk and smooth, moist body of the casserole.
Cheddar cheese
Melts into the mixture, adding richness, savoury flavour and a browned top.
Onions
Soften and sweeten as they cook, building the flavour base.
Bell peppers
Add tender texture and mild sweetness to the filling.

The step that matters

Mash the squash as smooth as you can. Lumps of squash stay firm while the eggs set, leaving a grainy texture instead of a uniform, custardy casserole.
