Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tripe
Provides the main body of the soup and its chewy texture once simmered.
Flour
Browned in the fat to thicken the broth and add a toasty flavour.
Onion
Softens in the fat and adds sweetness and savory depth to the broth.

The step that matters

Brown the flour lightly. Flour cooked in fat must be stirred and taken only to a light brown. Over-browning gives a bitter, burnt taste, while skipping the cook leaves a raw, pasty flavour and weak thickening.

Swap the onion

How well each one fits the dish's main ingredients (clove, garlic, parsley, flour, lemon, pepper):

  1. Shallotfits better
  2. Kalefits better
  3. Okrafits better
  4. Onionthe original

Fit is the average pairing score against clove, garlic, parsley, flour, lemon, pepper. Candidates are from the same food group and used in at least 100 recipes.
