Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Bakes into crisp, layered sheets that give the dessert its structure.
Eggs
Yolks thicken the custard as they cook, giving it a set, creamy texture.
Flour
Starch thickens the custard so it holds its shape when cooled.
Milk
Forms the liquid base of the custard, providing creaminess.
Sweet cream
Whipped into a topping that adds richness and a light, airy texture.
Sugar
Sweetens the custard and helps the whites whip into a stable foam.

The step that matters

Cooking the custard over water. Egg yolks thicken as they heat but can scramble if overheated. Cooking gently over hot water and stirring constantly keeps the custard smooth and evenly set.
