Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff peaks, they trap air and give the cake lift and a light structure.
Flour
Builds the cake's structure as its starches set during baking.
Baking powder
Releases gas in the batter, helping the layers rise in the oven.
White vegetable shortening
Coats flour particles, tenderizing the crumb and adding richness.
Sugar
Sweetens the cake and helps keep the crumb soft and moist.
Milk
Adds moisture and hydrates the flour so the batter can set.

The step that matters

Fold in the egg whites. Mix very lightly and fold rather than stir, so the air trapped in the whipped egg whites is not deflated, which would lose the cake's lift.

Swap the vanilla

How well each one fits the dish's main ingredients (egg, sugar, flour, milk):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Figfits less well
  4. Blueberryfits less well

Fit is the average pairing score against egg, sugar, flour, milk. Candidates are from the same food group and used in at least 100 recipes.
