What each ingredient does

Beef
Provides the main protein; slow simmering softens its connective tissue into a tender texture.
Oil
Carries heat for browning the meat and adds richness to the sauce.
Onions
Browned onions add savory depth and aroma to the stew base.
Gombos
Okra releases a natural thickening starch that gives the stew body.
Marrow seed paste
Ground seeds thicken the liquid and add a nutty, earthy flavour.

The step that matters

Sauté the onions until brown. Browning builds deep flavour through the Maillard reaction and caramelisation. Pale onions leave the stew tasting flat, while over-darkened ones turn bitter.

Swap the onion

How well each one fits the dish's main ingredients (beef, pepper):

  1. Capsicumfits better
  2. Tomatofits better
  3. Carrotfits about as well
  4. Onionthe original

Fit is the average pairing score against beef, pepper. Candidates are from the same food group and used in at least 100 recipes.
