Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ginger
Provides the main sharp, spicy aroma and flavour of the drink.
Milk
Adds richness and a softer, creamier body to the juice.
Sugar
Sweetens the drink and balances the sharpness of the lemon and ginger.
Green lemon
Adds acidity and brightness that cuts through the sweetness and richness.

The step that matters

Adding the lemon juice to the milk. Acid from lemon juice can curdle milk, causing it to separate into clumps. Stirring well and adding the lemon gradually, with the drink already sweetened and diluted, helps keep the milk smooth.

Swap the ginger

How well each one fits the dish's main ingredients (milk, sugar, lemon):
