Why it works: Pepper and lime match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 3,491 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Croquetas De Jamon
Ingredients
Directions
Make the filling
Foam butter and flour, then whisk in milk until the mixture thickens into a smooth paste. Do not overcook.
Add ham, salt, pepper, nutmeg, lime juice, and parsley; cook over low heat for 2 minutes, stirring constantly. Remove from heat.
Spoon the mixture into a pan or platter and let it cool thoroughly (room temperature or refrigerate).
Shape and coat
Sprinkle a light layer of bread crumbs on a work surface.
Scoop 1 tablespoon of the cooled mixture and shape it into a cylinder about 1½ inches long and ¾ inch in diameter.
Dip the shaped cylinder in beaten egg, then in crumbs; repeat with the remaining mixture, renewing crumbs as needed.
Fry and serve
Preheat the oven to 250°F.
Heat 2–5 inches of oil in a large skillet or deep fryer to 375°F; test with a drop of the mixture.
Fry 5–6 croquettes at a time until golden on all sides, turning with a slotted spoon. Do not fry too many at once.
Transfer fried croquettes to a paper‑towel‑lined platter to drain; keep warm in the oven until finished frying the rest.
Serve sprinkled with fresh lime juice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Butter
- Enriches the flour paste, adding flavor and richness to the filling.
- All-purpose flour
- Thickens the butter and milk into a paste that holds the croquette shape.
- Milk
- Hydrates the flour to form a thick, smooth béchamel-style binder.
- Cooked ham
- Provides the main savory flavor and body of the filling.
- Bread crumbs
- Forms a crisp, golden coating that browns when fried.
- Egg
- Binds the bread crumbs to the shaped filling so the coating adheres.
The step that matters
Cool the filling thoroughly before shaping. A warm, loose mixture cannot hold its cylinder shape and may split or leak oil when fried. Chilling firms the starch-thickened paste so it holds together through coating and frying.
Swap the lime
How well each one fits the dish's main ingredients (butter, flour, milk, ham, pepper, nutmeg, parsley):
- Lemonfits better
- Limethe original
- Figfits about as well
- Cherryfits less well
Fit is the average pairing score against butter, flour, milk, ham, pepper, nutmeg, parsley. Candidates are from the same food group and used in at least 100 recipes.
