What each ingredient does

Swiss cheese
Adds rich flavor and chewy, meltable texture to the salad.
Ham
Contributes savory, salty meatiness and chewy texture.
Olive oil
Forms the body of the dressing and carries its flavor.
Vinegar
Adds acidity that sharpens the dressing and balances the oil.
Garlic
Provides pungent, aromatic flavor to the dressing.
Tomatoes
Add juiciness, acidity, and fresh flavor to the salad.

The step that matters

Add oil gradually while beating the dressing. Oil and vinegar are immiscible, so adding the oil slowly while beating creates a temporary emulsion. Pouring it in all at once lets the oil separate and the dressing stay greasy and split.
