Ingredients

Directions

Prepare the filling

  1. Bring the fish to a boil over medium‑high heat, reduce heat to low, simmer 5 minutes, drain, cool, remove skin and bones, and flake.

  2. Cover potatoes and garlic with salted water in a medium saucepan, bring to a boil over medium‑high heat, cook until tender (20–25 minutes), then drain.

  3. Mash the potatoes, then add flaked fish, butter, salt, pepper, eggs, and parsley, mix well, and refrigerate at least 30 minutes.

Shape and fry

  1. Sprinkle a light layer of cracker meal on a work surface. Take a tablespoonful of the mixture, form into a ball about 1½ inches in diameter, and roll in crumbs; repeat with all mixture, renewing crumbs as needed.

  2. Preheat the oven to 250°F. Heat 2–3 inches of oil in a large skillet or deep fryer over medium‑high heat to 375°F, or until a drop of batter sizzles. Fry the puffs until golden brown on all sides, turning with a slotted spoon. Do not fry too many at once. Place cooked puffs on a paper‑towel‑lined platter in the oven until all are cooked, and serve hot, sprinkled with lime juice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Dried salt cod
Provides the main savory flavor and the flaky body of the filling.
All-purpose potatoes
Mashed starch that binds the filling and gives the balls a soft, light interior.
Eggs
Bind the mixture so the balls hold their shape during frying.
Cracker meal or fine bread crumbs
Form a dry outer coating that browns and crisps in the hot oil.
Salted butter
Adds fat for a richer, smoother texture in the filling.

The step that matters

Frying at the right temperature. Oil heated to 375°F browns the crumb coating quickly; oil that is too cool lets the balls soak up grease and turn heavy, while crowding the pan drops the oil temperature and causes uneven cooking.

Swap the clove

How well each one fits the dish's main ingredients (potato, garlic, butter, pepper, egg, parsley, bread):

  1. Thymefits better
  2. Marjoramfits better
  3. Capersfits better
  4. Clovethe original

Fit is the average pairing score against potato, garlic, butter, pepper, egg, parsley, bread. Candidates are from the same food group and used in at least 100 recipes.
