Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Chicken Roll with Pickled Vegetables
Ingredients
Directions
Prepare
Wrap chicken breasts in plastic film and pound to double their size. Sprinkle salt and pepper.
In a bowl mix pork, flour, black pepper, oregano, and salt.
Drain liquid from pickled vegetables. Mash garlic and incorporate into vegetables.
Assemble and bake
Place chicken breasts on a piece of aluminum foil. Lay the foil so no gaps. Spread pickled vegetable mixture over chicken. Lay spinach on top. Place pork mixture in center. Roll chicken around pork to form a roll. Wrap in foil and seal tightly.
Bake at medium heat for about 35 minutes. Remove from oven and unwrap carefully. Brush with oil and return to oven at high heat until outside is golden brown. Let cool for 5 minutes. Slice and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Chicken breasts
- Form the outer wrap and provide the main protein of the roll.
- Ground pork
- Forms the moist, savory filling that keeps the centre juicy while the chicken cooks.
- All-purpose wheat flour
- Binds the pork filling so it holds its shape when sliced.
- Spinach
- Adds a leafy layer inside the roll that adds moisture and colour.
- Vinegar of fruits
- Acidifies the pickled vegetables, giving them their sharp, preserved flavour.
The step that matters
Unwrapping and browning the roll. Browning needs dry surface heat, so the roll must be unwrapped and brushed with oil before the final high-heat bake. Staying wrapped steams the outside and leaves it pale.
Swap the clove
How well each one fits the dish's main ingredients (pepper, parsley, garlic, leek, vinegar, sugar, chicken):
- Thymefits better
- Tarragonfits better
- Marjoramfits better
- Clovethe original
Fit is the average pairing score against pepper, parsley, garlic, leek, vinegar, sugar, chicken. Candidates are from the same food group and used in at least 100 recipes.
