  3. Return chicken to skillet.

Simmer in the sauce

  1. Mix all remaining ingredients except tomatoes (and rice!), then pour the mixture over the chicken.

What each ingredient does

Chicken
Provides the main protein; browning first builds colour and flavour in the skillet.
Pineapple
Adds sweetness and acidity that balance the savoury sauce.
Dry sherry
Adds aromatic depth and acidity to the sauce as it simmers.
Vinegar
Adds sharp acidity that brightens the sauce.
Tomatoes
Add moisture and body to the sauce, softening into it as it simmers.
Onion
Softens and adds savoury sweetness as the base of the sauce.

The step that matters

Simmer uncovered until the thickest chicken pieces are cooked through. Thick pieces cook more slowly than thin ones, so checking the thickest piece reduces the risk of undercooked chicken, while uncovered simmering lets the sauce reduce and thicken.
