Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish fillets
Forms the main protein that cooks through under the broiler and flakes when done.
Brown mustard
Adds sharp flavour and helps the milk mixture cling to the fish.
Milk
Makes a moist wet layer that helps the cornmeal coating stick to the fish.
Cornmeal
Forms a crisp, golden coating that browns under the broiler.

The step that matters

Broil for 4 minutes per side. Fish is thin and cooks quickly under high direct heat, so it can dry out or overcook. Checking for easy flaking with a fork shows when the flesh is done.
