What each ingredient does

Young corn
Adds crisp-tender texture and a mild sweetness to the mix.
Cucumber
Adds crunch and moisture that stays crisp when served cold.
Garden pea
Adds sweetness and a tender bite to the vegetable mix.
Deep fried peanut
Adds crunch and a nutty richness that holds up in the cold dish.
Shallots
Add a sweet, mellow aromatic base when fried in oil.
Garlic
Adds pungent aroma that mellows during frying.

The step that matters

Stir fry the mixture until cooked. Cooking the vegetables until just tender sets their texture and drives off excess water, so the dish stays crisp rather than soggy once chilled.
