What each ingredient does

Chicken
Is the main protein that becomes tender and juicy during boiling and simmering.
Tomato paste
Concentrates the sauce, adding body, deep color and savory sweetness.
Onion
Softens and sweetens as it sautés, building the base flavor of the sauce.
Vinegar
Adds acidity that brightens the flavor and helps tenderize the chicken surface.

The step that matters

Brown chicken in pan with 2 tbsp oil. Browning creates flavorful caramelized crust through the Maillard reaction. Chicken pieces must be dry and spaced apart, or they will steam instead of browning.
