Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the meat mixture so the balls hold together after shaping and frying.
Ground beef
Provides the main body and savoury flavour of the meatballs.
Ground bacon or pork
Adds fat that keeps the meatballs moist and tender while cooking.

The step that matters

Chill the mixture before shaping. Chilling for at least an hour firms the fat in the soft, egg-bound meat, so the balls keep their shape when rolled and fried instead of crumbling or spreading.

Swap the garlic

How well each one fits the dish's main ingredients (beef, pork, egg, pepper):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Thymefits better
  4. Garlicthe original

Fit is the average pairing score against beef, pork, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
