Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Hold their shape when cubed, giving the salad body and bulk.
Mayonnaise
Adds fat and creaminess, binding the cubed vegetables and eggs together.
Vinegar
Adds acidity that brightens the flavor and cuts the richness of the mayonnaise.
Eggs
Add protein, richness and soft texture to the mix of crisp vegetables.

The step that matters

Cooking the vegetables until just tender. Overcooked vegetables turn soft and mushy, and they break apart when cut into even cubes. Boiling them until just tender keeps the cubes intact and the salad textured.

Swap the peas

How well each one fits the dish's main ingredients (egg, carrot, potato, beans, celery, parsley, turnip):

  1. Lentilsfits better
  2. Chickpeafits better
  3. Chestnutfits better
  4. Peasthe original
