Ingredients
Directions
Prepare the mushrooms
Place mushrooms in a small enameled, stainless steel or glass saucepan and pour in 2 c. of boiling water.
Let the mushrooms soak for 30 minutes.
Bring the mushrooms to a boil over high heat.
Reduce the heat to low and simmer uncovered for 15 minutes.
Drain the mushrooms, reserving the liquid.
Cook the rice
Heat the oil in a heavy 3 to 4 quart saucepan over moderate heat until a light haze forms above it.
Fry the pork in the oil, turning until crisp and brown.
Transfer the pork to paper towels to drain with a slotted spoon.
Add green pepper, parsley, scallions and garlic to the fat remaining in the pan and stir for about 2 minutes until the vegetables are soft but not brown.
Add the rice and stir constantly for 2 or 3 minutes until the grains turn somewhat milky and opaque. Do not let the rice brown.
Combine the reserved mushroom cooking liquid with enough boiling water to make 2 c. and pour the mixture over the rice.
Stir in mushrooms, pork, thyme, cloves and salt, and bring to a boil over high heat.
Reduce the heat to low, cover tightly, and simmer for about 20 minutes until the rice has absorbed all the liquid and becomes a rich walnut brown color.
Taste for seasonings.
Fluff the rice with a fork, serve.

What each ingredient does
- Dried djon djon mushrooms
- Provide the dish's deep, earthy flavor and dark color once their soaking liquid is used.
- Long-grain white rice
- Forms the bulk of the dish and absorbs the liquid as it cooks into a fluffy texture.
- Salt pork
- Renders fat for frying and leaves crisp bits that add savory richness.
- Scallions
- Add mild onion aroma to the fat before the rice is added.
- Green pepper
- Adds fresh, slightly bitter vegetable flavor and aroma when softened in the fat.
- Garlic
- Adds pungent aroma that mellows as it softens in the hot fat.
The step that matters
Toasting the rice without browning it. Stirring the grains in fat until they turn milky and opaque coats them and helps them stay separate. Browning them adds bitterness and can change the flavor of the finished dish.
Swap the clove
How well each one fits the dish's main ingredients (mushroom, pepper, parsley, garlic, pork, rice, thyme):
