Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Hard bread
- Provides the sliced base that soaks up the custard and fries to a crisp outside.
- Eggs
- Set when heated, binding the soaked bread into a tender, custardy interior.
- Milk
- Moistens the bread and carries the egg into it, keeping the slices soft inside.
- Sunflower oil
- Conducts heat in the hot pan, browning the outside of the slices.
The step that matters
Fry the slices in hot oil. If the oil is not hot enough, the slices absorb oil and turn greasy instead of browning quickly. Enough heat seals the egg coating so it crisps rather than soaking up fat.
