What each ingredient does

Mackerel
Forms the main body of the dish, cooking gently in the sauce to become tender and flaky.
Tomatoes
Provide moisture and acidity that form the base of the sauce.
Onions
Add sweetness and savoury depth as they soften in the oil.
White wine
Adds acidity and aroma to the sauce and helps lift the flavour of the tomatoes.

The step that matters

Simmering the sauce. Simmering for the full 15-20 minutes lets the tomatoes break down and the liquid reduce, so the sauce thickens rather than leaving the fish in a watery bath.

Swap the clove

How well each one fits the dish's main ingredients (onion, garlic, tomato, parsley, white wine):

  1. Thymefits better
  2. Cuminfits better
