Ingredients

Directions

Prepare the loaf

  1. Combine ground beef with flour, 1 tbsp oil, salt, pepper and zhoug. Form the meat mixture into a 10-inch loaf. Make a well the entire length of the loaf.

  2. Heat 3 tbsp of oil in a skillet. Saute together the onions, mushrooms and parsley until the onions are golden. Place the mixture in the well of the loaf. Lightly beat the eggs and pour over the vegetables.

  3. Pat the sides of the loaf together to close up the well, and wrap in aluminum foil.

Bake and serve

  1. Preheat oven to 350 degrees.

  2. Bake for 30 minutes. The loaf may be served either hot or cold.

Make the zhoug

  1. In a blender, puree enough chili peppers to measure 1 cup. Puree parsley and coriander together and blend well with the chili peppers. Add garlic, seasonings and olive oil. Again, blend well.

  2. Put the zhoug in a jar and keep it in the refrigerator. It will remain fresh for many months.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground beef
Forms the bulk of the loaf and gives it its meaty structure and richness.
Eggs
Bind the vegetables and meat together and help the loaf hold its shape.
Flour
Absorbs juices and helps the meat mixture hold together when sliced.
Onions
Add sweetness and moisture when sauteed until golden.
Zhoug
Adds heat, aroma and herbal flavor throughout the meat.

The step that matters

Pat the sides of the loaf together to close up the well. If the well is not sealed, the egg and vegetable filling can leak out during baking, leaving the loaf dry and uneven.

Swap the coriander
