Ingredients

Directions

Prepare the dough

  1. Sift flour, add water and salt gradually, mixing dough until soft but pliable. Divide dough into ten pieces, knead each well. Place on a tray sprinkled with water and let rise at least one hour.

  2. Cook ground beef with chopped onion, black pepper, and salt in a saucepan over medium heat until cooked. Set aside to cool.

Make the filling and pastries

  1. Chop leeks and wash several times through a strainer, drain, and blot dry on paper towel. Add leeks to ground beef. Take a piece of dough, dust with flour, roll out, stretch until thin. Trim edges. Brush two tablespoons of egg and oil mixture over dough. Fold to form smaller squares.

  2. Heat a frying pan or griddle over medium heat with one tablespoon of oil. Fry pastry squares on both sides until golden brown.

  3. Repeat the above method with five remaining pieces. For the sixth piece, repeat up to the folding stage. Place one fried pastry square in the center of the unfolded piece, cover generously with ground beef and three tablespoons of beaten egg, then fold into a square.

Finish and serve

  1. Sprinkle oil and egg mixture between layers. Fry in three tablespoons of oil over medium heat until both sides are golden brown. Repeat with remaining four pieces of dough.

  2. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the dough structure that stretches thin and crisps when fried.
Eggs
Bind the filling and add richness to the layers, helping them set and brown.
Corn oil
Adds fat that keeps the thin layers tender and helps them turn golden when fried.
Ground beef
Provides the savory, moist filling that cooks through inside the pastry.
Leeks
Add mild onion-like aroma and moisture to the filling.
Onions
Add sweetness and aroma as they cook down into the beef filling.

The step that matters

Stretching the dough thin. Thin dough cooks evenly and fries crisp; thick dough stays doughy in the middle. Resting the dough beforehand relaxes the gluten, making it easier to stretch without tearing.

Swap the onion

How well each one fits the dish's main ingredients (flour, egg, corn, leek, pepper, beef):

  1. Chivefits better
  2. Asparagusfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against flour, egg, corn, leek, pepper, beef. Candidates are from the same food group and used in at least 100 recipes.
