Ingredients

Directions

Prepare the dough

  1. Oil a round small casserole pan.

  2. Roll the dough into two thin round flat pieces (1 mm).

  3. Make one piece smaller than the other.

Assemble

  1. Place the larger dough in the pan.

  2. Some of the dough should overlap the pan by 2 cm all around.

  3. Place the filling and pull excess dough over the top to enclose the filling.

  4. Place the smaller dough on top to completely encase the filling.

Cook

  1. Cook on medium heat for 20 minutes, slowly adding small amounts of butter from the sides of the Klin.

  2. Carefully flip the Klin over and continue to cook for 20 minutes, adding butter.

Flour and butter barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the dough's structure, so the thin layers hold together while cooking.
Butter
Adds richness and fat, helping the dough brown and crisp in the pan.
Eggs
Bind the dough and filling, giving structure as they set.
Cheese
Provides savory flavour and moisture to the filling.
Cooked rice
Bulks out the filling and adds soft texture.

The step that matters

Carefully flip the Klin over. The dough is rolled very thin, so it can tear when turned. Adding butter as it cooks keeps the surface from sticking and helps it brown evenly.
