What each ingredient does

Suji (semolina)
Forms the body of the halwa as it cooks in ghee and absorbs the syrup.
Ghee
Fat that coats the semolina, adds richness, and helps it toast gently to a light creamy color.
Sugar
Sweetens the dish and, once boiled with water, forms the syrup that the semolina absorbs.
Sliced almonds
Add crunch and nutty flavor to the finished halwa.
Raisins
Add chewy sweetness and bursts of fruit flavor throughout.

The step that matters

Adding the syrup to the semolina. Hot syrup poured into toasted semolina can splatter and clump if stirred slowly. Stirring briskly spreads the liquid evenly so the grains absorb it uniformly and the halwa stays smooth rather than lumpy.
