What each ingredient does

Pappadams
Thin lentil wafers that turn crisp and light when deep fried.
Red onions
Add sharp, savory crunch to the seasoned topping.
Fresh tomatoes
Add moisture and gentle acidity to the seasoned topping.
Mustard oil
Carries the spices and adds a pungent, sharp flavor to the topping.
Fresh red chilies
Add heat and pungency to the topping.

The step that matters

Do not over fry the papads. Over-frying scorches the starches and oils in the papad, making them bitter. Fry each sheet only until it turns crisp, then drain it promptly.
