What each ingredient does

Eggs
Whipped with sugar, they trap air and give the cake its light, risen structure.
Flour
Provides the starch that sets during baking to give the cake its body.
Baking powder
Releases gas during baking, helping the cake rise and stay airy.
Butter
Adds fat for a tender crumb and rich flavour.
Apple
Adds moisture and fruity flavour, and its slices bake into the cake's top layer.
Sugar
Sweetens the cake and helps the eggs whip to a stable foam.

The step that matters

Beating the eggs with the sugar until they rise. Whipping eggs with sugar traps air in the foam. If they are under-whipped, the batter will be dense and the cake will not rise well in the oven.
