Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pancake mix
Provides the flour and starch that set the batter into a cake structure.
Egg
Binds the batter and adds structure and richness as it sets.
Baking powder
Releases gas in the batter, helping the cake rise and become light.
Sugar
Adds sweetness and helps the cake brown slightly and stay moist.
Coconut water
Supplies the liquid that hydrates the batter and carries coconut flavor.
Orange juice
Adds acidity and citrus aroma, with moisture for the batter.

The step that matters

Remove the cake from the heat as soon as the knife comes out clean. Residual heat from the pan keeps cooking the cake after it leaves the heat. Pulling it off at the first sign of set prevents the crumb from drying out.

Swap the orange

How well each one fits the dish's main ingredients (sugar, coconut, lime, egg):

  1. Vanillafits better
  2. Mangofits better
  3. Avocadofits better
  4. Orangethe original

Fit is the average pairing score against sugar, coconut, lime, egg. Candidates are from the same food group and used in at least 100 recipes.
