Ingredients

Directions

Prepare the onions

  1. Place oil, vinegar, salt, and peppercorns in a large heavy pot and bring to a simmer. Add onions and simmer slowly for about one hour.

Prepare and fry the fish

  1. While the onions are simmering, rinse the fish under cold water and place on a cutting board.

  2. Pat the fish pieces dry with a paper towel and rub all sides with lime juice.

  3. Dredge the fish in seasoned flour, ensuring it is completely coated, and set aside. Once floured, refrigerate for at least half an hour.

  4. Heat about a quarter cup of oil in a heavy skillet. When the oil is hot, fry a few pieces of fish until golden brown on all sides, adjusting heat to avoid burning.

Layer and marinate

  1. Place a layer of the onion and oil mixture in a large container with a tight lid, preferably glass.

  2. Place a layer of fried fish in the container, then add another layer of onion and oil mixture. Continue layering until all fish is used, ensuring the final layer is fully covered by the onion mixture.

  3. Refrigerate the assembled layers for at least three days, turning the fish from bottom to top at least twice a day, being careful not to break the fish pieces.

What each ingredient does

King fish
Forms the main body of the dish, holding its shape through frying and marinating.
Onions
Provide sweetness and bulk, softening as they simmer in the oil and vinegar.
Vinegar
Adds acidity that tenderizes and sharpens the flavor of the fish and onions.
Olive oil
Carries flavor and moisture, and fries the fish to a golden crust.
Seasoned flour
Forms a coating that browns during frying and helps the fish keep its shape.

The step that matters

Frying the floured fish. Fish fried over high heat can scorch on the outside before cooking through, and dredging that is not dry or evenly coated will spatter or break apart. Keep the heat moderate and fry in small batches.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (fish, lime, flour, olive, vinegar, pepper, corn):

  1. Capsicumfits better
  2. Lettucefits better
  3. Tomatofits better
  4. Onionthe original

Fit is the average pairing score against fish, lime, flour, olive, vinegar, pepper, corn. Candidates are from the same food group and used in at least 100 recipes.
