Ingredients

Directions

Prepare the plantains

  1. Peel the plantains carefully to avoid breaking them, and ensure they are whole for appearance.

  2. Preheat the oven to 350°F (175°C).

  3. While the oven preheats, fry the plantains in enough oil to cover them; remove when golden brown.

  4. Drain excess oil on paper towels.

  5. Slit each plantain lengthwise, about an inch from each end, half as deep as the plantain's circumference.

Make the filling

  1. Prepare the filling per instructions below and set aside.

  2. To make the filling, pour olive oil into a medium saucepan and heat over medium heat.

  3. Add the ingredients in (A) and sauté for about five minutes.

  4. Stir in the ground meat and cook for about five minutes.

  5. Add raisins and continue cooking for another five minutes or until the meat is cooked but not dry.

  6. Remove the bay leaf if desired.

Assemble and bake

  1. Place about two tablespoonfuls of the filling inside each slit.

  2. Arrange the plantains side by side in an ovenproof dish.

  3. Spread grated cheddar cheese over the filling.

  4. Bake in the oven for about ten minutes.

  5. Serve alone for a light meal or with white rice and beans for a traditional Puerto Rican dinner.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Plantains
Starchy base that softens and turns sweet when fried and baked, holding the filling.
Ground meat
Provides the savory, protein-rich body of the filling.
Cheddar cheese
Melts over the filling and browns lightly in the oven.
Raisins
Add pockets of sweetness that contrast with the savory meat.

The step that matters

Fry the plantains until golden brown. Frying sets a firm outer shell so the plantain holds its shape when slit and filled, and browning adds flavor through the Maillard reaction. Undercooked plantains stay starchy and may tear.

Swap the clove

How well each one fits the dish's main ingredients (lobster, shrimp, beef, chicken, turkey, cheddar cheese, garlic):

  1. Thymefits better
  2. Celeryfits better
  3. Pepperfits better
  4. Clovethe original

Fit is the average pairing score against lobster, shrimp, beef, chicken, turkey, cheddar cheese, garlic. Candidates are from the same food group and used in at least 100 recipes.
