What each ingredient does

Potatoes (in the method)
Form the starchy body of the kabab that binds around the eggs.
Eggs
Provide the boiled egg centre and the beaten egg that helps breadcrumbs stick.
Onion
Adds savory sweetness and moisture to the potato mixture when fried golden.
Breadcrumbs (in the method)
Form a crisp outer coating that browns when deep fried.
Flour
Gives the first coating a dry surface so the beaten egg adheres.

The step that matters

Drain and dry the potatoes. Excess surface water makes the potato mixture soft and loose, so the balls can fall apart or absorb oil. Drying them in a hot pan evaporates moisture so the mixture holds its shape.

Swap the ginger

How well each one fits the dish's main ingredients (potato, egg, onion, flour, pepper, garlic, bread):
