Why it works: Garlic and onion match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 29,058 recipes. Both carry furaneol, which smells caramel, strawberry. The science ↓
Piononos De Amarillo
Ingredients
Directions
Prepare the shell
Peel the plantains, discarding the outer rind.
Slice the plantains lengthwise; you should get four slices from an average ripe plantain.
Pour the frying oil into a medium saucepan and heat over medium heat.
Fry the plantains a few at a time until they turn a light golden tan.
Remove the plantains and allow them to cool enough to handle comfortably or wear cooking gloves.
Shape and fill
Bend each plantain slice into a round shape and use one or two round toothpicks to hold the ends, creating a hollow center.
Fill each hollow plantain with the prepared filling.
Seal and fry
Baste the ends of the filling with beaten eggs.
Fry the filled plantains over medium heat, using just enough oil to cover the bottom of the pan, for two to three minutes or until the egg basting at the bottom looks cooked (omelet-like).
Carefully lift each pionono, turn it over, and fry on the other side.
Make the filling
Sauté the ingredients listed in (B) for about five minutes over medium‑high heat.
Stir the lean ground meat into the sautéed ingredients and cook covered for about ten minutes over medium heat.
Add the diced string beans and raisins, and continue cooking for another five minutes or until the meat is cooked but not dry; remove the bay leaf if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Plantains
- Form the edible shell, which turns golden and firm when fried and holds the filling.
- Lean ground meat
- Provides the main body and savory bulk of the filling.
- Eggs
- Set into a thin omelet-like layer that seals the filled ends together.
- Raisins
- Add pockets of sweetness that balance the savory filling.
The step that matters
Frying the egg-basted ends. Egg proteins set at moderate heat, so the egg seals the filling in place. If the pan is too hot or the oil too deep, the egg browns or burns before it sets and the filling can spill out.
Swap the raisin
How well each one fits the dish's main ingredients (garlic, clove, olive, pepper, onion, meat, beans):
- Avocadofits better
- Limefits better
- Cherryfits better
- Raisinthe original
Fit is the average pairing score against garlic, clove, olive, pepper, onion, meat, beans. Candidates are from the same food group and used in at least 100 recipes.
