What each ingredient does

Garlic cloves
Provide the main body and pungent flavour of the salad, mellowed by brief blanching.
Extra virgin olive oil
Carries the flavour and keeps the garlic moist and coated in the jar.
Fresh lemon juice
Adds acidity that brightens the dressing and balances the rich oil.

The step that matters

Blanching the garlic for 3 to 5 minutes. Heat softens the sharp compounds in raw garlic, so brief blanching mellows its bite. Leaving it too long can make the cloves soft and cooked-tasting, and rinsing in cold water right after stops the cooking so the texture stays firm.

Swap the clove

How well each one fits the dish's main ingredients (garlic, olive, lemon, pepper):

  1. Parsleyfits better
  2. Thymefits better
  3. Basilfits better
  4. Clovethe original

Fit is the average pairing score against garlic, olive, lemon, pepper. Candidates are from the same food group and used in at least 100 recipes.
