Why it works: Beans and rice match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 1,017 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Gallo Pinto I

Time~3 hours

Ingredients

Directions

Cook the beans

  1. Soak dried beans overnight; if fresh, rinse them.

  2. Drain the beans, add fresh water to an inch above the beans, add salt, and bring to a boil.

  3. Cover the pan, reduce the heat to very low, and simmer until the beans are soft (~3 hours).

Cook the rice

  1. Chop the cilantro, onion, and sweet pepper very finely.

  2. Add 1 tablespoon oil to a large pan and sauté the dry rice for 2 minutes over medium‑high flame.

  3. Add half of the chopped onion, sweet pepper, and cilantro; sauté another 2 minutes.

  4. Add water or chicken broth, bring to a boil, cover, and reduce the heat to simmer until the rice is tender (20‑35 minutes).

Combine and serve

  1. Once the rice and beans are cooked, refrigerate or freeze them.

  2. Keep a significant amount of the “black water” with the beans (½‑1 cup).

  3. Sauté the rice, beans, reserved chopped onion, sweet pepper, and cilantro together in vegetable oil for a few minutes.

  4. Sprinkle with a little fresh chopped cilantro just before serving.

  5. Make up small batches of Gallo Pinto when you want it by simply sautéing them together.

What each ingredient does

Black beans
Main ingredient; their soft, hearty texture forms the body of the dish.
White rice
Forms the bulk of the dish; its starch absorbs liquid and cooks into tender, separate grains.
Onion
Aromatic base that adds savoury sweetness as it softens in the hot oil.
Cilantro
Fresh herb adding bright, aromatic flavour, especially when sprinkled on at the end.
Chicken broth or water
Cooking liquid that the rice absorbs, carrying flavour into every grain.
Vegetable oil
Fat for sautéing that coats the grains and helps them brown lightly and stay separate.

The step that matters

Sauté the dry rice before adding liquid. Toasting the raw grains in oil coats each grain with fat, which helps them stay separate and cook more evenly once the liquid goes in.

Swap the onion

How well each one fits the dish's main ingredients (beans, coriander, pepper, chicken, rice):

  1. Capsicumfits better
