What each ingredient does

Brussels sprouts
Form the main body of the dish and carry the buttery, crumb-coated flavour.
Butter
Adds richness and fat, and browns slightly to give a nutty aroma.
Bread crumbs
Toast in the butter to add crisp browning and a contrasting texture.

The step that matters

Frying the bread crumbs until golden brown. Butter can burn quickly over high heat, which leaves bitter flavour. Watching the crumbs closely, and stopping once golden, gives nutty flavour without scorching.
