Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplants
Form the salad's soft, creamy body once roasted, peeled and chopped.
Oil
Added little by little, it emulsifies into the eggplant, making the mixture light and creamy.
Onion
Adds sharp, savoury bite that balances the mellow eggplant.
Dill
Contributes fresh, herbal aroma that brightens the eggplant.

The step that matters

Mixing in the oil. Adding oil gradually while beating lets it emulsify into the eggplant. Adding it all at once can split the mixture, so it stays greasy and fails to turn light and foamy.
