What each ingredient does

Potatoes
Provide starch and body that thickens the soup and gives it a hearty texture.
Butter
Provides fat for cooking the flour and adds rich flavor.
Flour
Thickens the milk into a smooth, creamy base when cooked with butter.
Milk
Forms the liquid base of the soup, which thickens as it heats.
Cheddar cheese
Melts into the soup, adding savory flavor and a creamy, rich texture.
Sour cream
Adds tang and creaminess to the finished soup.

The step that matters

Gradually add milk to the butter-flour mixture, whisking constantly. Adding milk slowly while whisking keeps the flour dispersed, so the base thickens smoothly instead of forming lumps.
