Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shrimp
Provides the main protein, which firms and turns opaque when cooked.
Crushed tomatoes
Supply acidity and liquid that form the body of the sauce.
Olive oil
Carries the aromatics and conducts heat for the initial sauté.
Onions
Soften and add sweetness that balances the acidity of the tomatoes.
Garlic
Adds pungent aroma that mellows as it cooks in the oil.
Sherry
Adds acidity and depth of flavour to the sauce.

The step that matters

Cooking the shrimp in the sauce. Shrimp cook quickly and turn rubbery when overcooked. Cooking them over low heat for the stated time keeps them tender while the sauce thickens and flavours them.
