What each ingredient does

Sweetened condensed milk
Milk sugars and proteins brown slowly during long cooking, turning thick and caramel-flavored.

The step that matters

Keeping the can fully covered in water. Any exposed part of the can overheats, and pressure builds inside the sealed can while it simmers. If the can is uncovered, it can burst.
