Why it works: Celery and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 3,467 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Cucumber Boat Stuffed with Flaked Fish Salad
Ingredients
Directions
Prepare the cucumbers
Peel 4 medium cucumbers into 1/2-inch strips.
Cut each cucumber in half lengthwise to produce eight halves (or one half per person).
Cut out the soft centers with a grapefruit knife, chop them, and set aside.
Cut a strip from the bottom of each cucumber half so it rests firmly on the plate.
Make the fish filling
In a 2-quart bowl, combine 2 cups cold flaked fish (halibut, bass, etc., or canned tuna or salmon), 1/2 cup celery cut into 1/2-inch pieces, and all the chopped cucumber from the boats.
Add 1/2 cup sour cream, 4 tablespoons lemon juice, 2 tablespoons sugar, and 1/2 teaspoon salt to the fish mixture.
Blend well and chill.
Assemble the boats
Shred 1 head lettuce into long thin slivers to simulate waves.
Arrange the lettuce on dinner or large salad plates.
Place the cucumber boat on the lettuce.
Fill the cucumber shells with the chilled fish mixture.
Cut 1 slice American cheese in half diagonally to form a sail.
Place the cheese sail in the center of the mixture, narrow edge upright.
Cut a tiny banner from 1 pimento piece (1/2 inch × 1 1/2 inches) and pin it to the center of the narrow side of the cheese with a toothpick.
Garnish around the edge with 2 or 3 tomato slices and parsley sprigs.

What each ingredient does
- Cold flaked fish
- Forms the bulk of the filling and provides the main protein and texture.
- Sour cream
- Adds creaminess and moisture that binds the filling together.
- Lemon juice
- Adds acidity that brightens the flavor and balances the cream.
- Cucumber
- Provides crisp texture and fresh moisture, and its scooped flesh is mixed into the filling.
- Celery
- Adds crunch that contrasts with the soft fish and cream.
- Sugar
- Adds a touch of sweetness that softens the tartness of the lemon juice.
The step that matters
Chill the fish mixture before filling the boats. Cold fish and sour cream keep the filling firm and food-safe, and chilling lets the flavors blend so the filling does not run or taste flat.
