Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Double cream
Whipped to soft peaks, it adds richness and a light, airy texture to the fool.
Mangoes
Provide the main fruit flavour and the smooth pulp that forms the body of the fool.
Icing sugar
Sweetens the mango purée and dissolves easily into the fruit without grittiness.
Lime juice
Adds acidity that brightens the sweetness of the mango.

The step that matters

Folding the cream into the mango mixture. Fold gently so the whipped cream keeps its air. Overmixing or whipping the cream too stiff causes it to deflate or turn grainy, leaving a dense, less light fool.

Swap the lime

How well each one fits the dish's main ingredients (mango, sugar, orange, cream):

  1. Vanillafits better
  2. Pineapplefits better
  3. Strawberryfits better
  4. Limethe original
