What each ingredient does

Eggs
Whites whipped and folded in give the loaf an airy, lighter structure, while yolks add richness.
Butter
Creamed with sugar, it traps air and adds fat for a tender, rich crumb.
Flour
Forms the main structure of the loaf as it sets in the oven.
Baking powder
Releases gas in the batter, helping the loaf rise and become lighter.
Apples
Add moisture and tartness, and soften into the batter as it bakes.
Sugar
Sweetens the batter and helps tenderize the crumb when creamed with butter.

The step that matters

Folding in the egg whites. Whites hold air only when whipped to stiff peaks; folding gently keeps that air in the batter. Stirring vigorously deflates it, leaving a denser loaf with less rise.
