Ingredients

Directions

Prepare the filling

  1. Mince the beef coarsely.

  2. Fry the onions until pale gold, then add the beef and seasoning and cook until the juice is reabsorbed.

Shape the pastry fingers

  1. Cut gullash sheets into 10 cm squares.

  2. Keep the squares covered with a moist cloth.

  3. Take one square at a time, covering the rest immediately.

  4. Place the square on a smooth surface.

  5. Arrange minced meat in a narrow strip at the center of the square, 1 cm from both ends.

  6. Fold the ends over the meat mixture.

  7. Roll the pastry tightly so that it resembles a cigarette.

Bake

  1. Arrange the pastry fingers tidily in a greased baking tray.

  2. Brush the top with melted butter.

  3. Bake in a preheated moderate oven until golden.

What each ingredient does

Gullash
Thin pastry sheets that wrap the filling and bake up crisp and golden.
Beef
Provides the savory meat filling that gives the pastry its main flavour and body.
Onions
Softened and browned slightly, they add sweetness and depth to the filling.
Butter
Brushed on top, it adds richness and helps the pastry brown evenly.

The step that matters

Cooking the filling until the juice is reabsorbed. If the meat is still wet, moisture soaks into the thin pastry while baking, making it soggy and hard to roll tightly. Cooking off the juice keeps the pastry crisp.

Swap the onion
