Ingredients

Directions

Prepare the meat

  1. Cut beef into bite‑sized cubes.

  2. Mix flour, cinnamon, and seasoning and roll meat in this mixture.

Cook

  1. Cook meat, onion, and pinch of salt over very slow flame.

  2. When the juice is re‑absorbed, add garlic and cooking oil and fry lightly.

  3. Add water to barely cover and cook over low heat for one hour, adding more hot water along the side of the pot whenever the level of the juice is too low.

  4. Serve with the juice, which should be fairly concentrated.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main body of the dish and becomes tender during the long, slow cooking.
Flour
Coats the meat so it thickens the cooking juices into a richer, more concentrated sauce.
Onions
Release moisture as they cook slowly, adding sweetness and building the base of the juices.
Garlic cloves
Adds pungent aroma when fried lightly in oil before the long simmer.

The step that matters

Cooking the meat over very slow flame until the juice is re-absorbed. Low heat lets the meat and onions release and then reabsorb their juices gently, so the meat browns lightly rather than boiling. Rushing this stage with high heat can toughen the meat and scorch the onions before the sauce develops.

Swap the onion

How well each one fits the dish's main ingredients (beef, cinnamon, flour, garlic, clove, pepper):

  1. Eggplantfits better
  2. Okrafits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against beef, cinnamon, flour, garlic, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
