What each ingredient does

Eggs
Coat the noodles and set into a creamy, silky binding when stirred over heat.
Butter
Carries the garlic and herbs and adds richness to the skillet base.
Parmesan cheese
Adds salty, savory depth and helps the egg mixture cling to the noodles.
Fettuccine (in the method)
Forms the base of the dish, carrying the sauce and meats in every bite.

The step that matters

Stir continuously until eggs coat fettuccine. Eggs thicken when heated but scramble if they get too hot or sit still. Constant stirring over moderate heat, with the hot pasta, sets them into a smooth coating rather than lumps.
