Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Basmati rice
Forms the separate-grained base layer that gives the bake its body.
Butter
Adds richness and helps the onion and rice brown lightly in the pan.
Spinach
Adds moisture and leafy bulk that cooks down into the vegetable layer.
Mushrooms
Contribute savoury, earthy flavour and moisture to the vegetable layer and topping.
Cheese
Melts and binds the vegetable layer while browning on top in the oven.
Carom seeds
Add a sharp, thyme-like aroma to the vegetable layer.

The step that matters

Let the mixture dry a little before layering. Spinach and mushrooms release water as they cook; letting the mixture reduce keeps the layer from making the rice soggy during baking.
