What each ingredient does

Eggplants
Roasting softens the flesh, giving the salad its creamy, tender body.
Onions
Softening in hot oil turns their sharpness mellow and adds sweetness and body.
Tomatoes
Provide moisture and gentle acidity that build the sauce's flavor as they cook down.
Peppers
Roasting concentrates their sweetness and adds a smoky, savory aroma.
Oil
Carries heat to the onions and adds fat that rounds out the flavor.

The step that matters

Frying until most of the liquid is absorbed. Eggplant, peppers and tomatoes release a lot of water. Cooking it down concentrates the flavor and keeps the salad from being watery.
