Rice Soup

Ingredients

Directions

Prepare the rice

  1. Rinse the jasmine rice in cold water and transfer the rinsed rice to a large stock pot.

  2. Sprinkle 2 teaspoons of salt and shake mildly to combine.

  3. Add 10 cups of cold water and 1/2 cup of cooking oil, then partially cover.

Cook the soup

  1. Turn the stove to HIGH and bring the rice-water mixture to a boil.

  2. Reduce heat to medium or medium-low.

  3. Cook for 3 hours, stirring occasionally; the soup will thicken over time.

  4. If the soup becomes too thick, add water and continue cooking.

Marinate the chicken

  1. Meanwhile, combine the chicken, 1/2 teaspoon salt, sugar, soy sauce, cornstarch, and cooking oil, stirring to coat the chicken with the marinade.

  2. Let the chicken sit for at least 30 minutes to marinate.

  3. If marinating overnight, combine all ingredients except the oil and add the oil right before using in the soup.

Finish and serve

  1. During the last 15 minutes of cooking, add the marinated chicken and stir to cook, about 5–10 minutes.

  2. Serve the soup in a heat-resistant bowl.

What each ingredient does

Jasmine rice
Breaks down during long simmering to give the soup its body and thickness.
Boneless skinless chicken thighs
Provide the meat in the soup, cut into thin strips so they cook quickly.
Soy sauce
Adds salty, savory flavor and colour to the marinated chicken.
Cornstarch
Coats the chicken so it stays tender and helps thicken the marinade.
Cooking oil
Adds richness and helps keep the rice from sticking and foaming during cooking.

The step that matters

Simmering the rice for 3 hours. Long, gentle simmering with occasional stirring lets the rice starch break down and thicken the soup. Too high a heat can scorch the bottom of the pot, so keep the heat at medium or lower and check for sticking.
