Chicken Yassa to Die for

Time15–20 minutes on each side

Ingredients

Directions

Marinate

  1. Combine all the ingredients except the chicken to make the marinade.

  2. Clean the chicken breasts.

  3. Place the chicken in a large glass baking dish.

  4. Pour about 1/3 to 1/2 of the marinade over the chicken, and let it marinate overnight.

  5. Reserve the rest of the marinade.

  6. At some point, turn the chicken over.

Cook and serve

  1. Turn on the broiler in the oven and set the rack on the second rung from the top.

  2. Broil the chicken 15–20 minutes on each side.

  3. If desired, baste the chicken after 5–6 minutes on the top side, then finish broiling.

  4. While broiling the chicken (or before), sauté a lot of thinly-sliced onions in a non-stick skillet over medium‑low heat until golden.

  5. Heat the reserved marinade in the microwave, or add it toward the end of the cooking time in the oven if no microwave.

  6. Heap the sautéed onions over the chicken.

  7. Serve with warm French or Italian bread and a salad of greens.

What each ingredient does

Chicken breasts
Provide the main protein that the marinade flavours and the broiler cooks through.
Oil
Carries the fat-soluble flavours of the marinade and helps keep the chicken moist.
Red wine vinegar
Adds acidity that brightens the marinade and tenderises the surface of the chicken.
Lime juice
Adds sharp acidity that complements the garlic and ginger and tenderises the meat.
Garlic
Contributes pungent aroma and savoury depth to the marinade.
Onions (in the method)
Sautéed until golden, they add sweetness and browning to the finished dish.

The step that matters

Broiling the marinated chicken. Broiling at high direct heat browns the surface quickly while the inside cooks. Basting partway through helps keep the surface from drying out before the centre is cooked through.

Swap the lime

How well each one fits the dish's main ingredients (chicken, red wine, vinegar, garlic, clove, ginger, pepper):

  1. Limethe original
  2. Plumfits about as well
  3. Lemonfits about as well
  4. Mangofits less well
