Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground beef
Provides the meat base and savory flavor of the curry sauce.
Curry powder
Supplies the main spice flavor and aroma of the dish.
Cornstarch
Thickens the liquid into a glossy sauce when heated.
Long grain white rice
Forms the starchy base that soaks up the curry sauce.
Onion
Adds sweetness and aromatic depth as it softens and browns.

The step that matters

Adding the cornstarch mixture. Cornstarch must be mixed with cold liquid first and then stirred into a simmering sauce. Added dry or to a cold mixture, it clumps, and the sauce stays thin or lumpy. Simmering is needed to fully thicken it.

Swap the garlic

How well each one fits the dish's main ingredients (rice, beef, sauce, onion, pepper):

  1. Garlicthe original
  2. Celeryfits about as well
  3. Turmericfits about as well
  4. Cuminfits less well

Fit is the average pairing score against rice, beef, sauce, onion, pepper. Candidates are from the same food group and used in at least 100 recipes.
